From Greek-inspired interiors to an exclusive selection of wines, estiatorio Milos at Marina Bay Sands is more than just a restaurant — it's a celebration of rich culture and flavors.
Since its inception in Montreal in 1979, Milos has established itself as a global leader in Greek cuisine, winning the hearts of gourmands worldwide. Today, it aims to do the same in Singapore with the recent opening of estiatorio Milos at Marina Bay Sands.
Quality ingredients are at the heart of estiatorio Milos’ menu. Therefore, simplicity is key when it comes to cooking techniques, highlighting the freshness of flavors. With the majority of seafood sourced directly from Greece, such as octopus, grouper, red sea bream, seabass, and more, you’ll be treated to an unforgettable feast that’s complemented by other Greek ingredients like cheese, an assortment of produce, as well as artisanal sea salt that’s hand-harvested from the pristine waters of the Aegean sea.
Beyond food, the architectural design of estiatorio Milos draws inspiration from the island of Milos, embodying a sense of openness and breeziness. The spacious restaurant features a Kalami ceiling that evokes the feeling of dining under a grand pergola on a coastal terrace. This, combined with the fish market view, creates a unique ambiance that marries the sophistication of the outdoors with a sense of lightness and airiness.
Designed by Alain Carle Architecte, who also developed the restaurants in Las Vegas and New York, the concept of estiatorio Milos embodies the simplicity in Greek architecture. From the monumental marble entrance made from Pendelikon marble, whose origin from Athens dates back to the Parthenon, to the cylindrical portico that evokes the iconic windmills of the Cycladic islands of Greece, the elevated entrance acts as a transition into a world of dining excellence.

As you walk through the grand entrance, the warm tones of European oak and the strategic placement of large urns and artifacts from various Greek regions, including Thessaloniki and Crete, enhance the restaurant's sculptural qualities.
These elements are harmoniously set against the purity of the white space, creating a dialogue between tradition and modernity. Adding to this artistic atmosphere are the photographic works of Costas Spiliadis' daughter, which focus on the interplay of light and geometry in the Greek landscape, further emphasizing the restaurant's deep cultural roots.
Another highlight of Milos Singapore is its wine program, which offers a comprehensive selection of the finest wines. With around 350 to 400 wine labels, half of which are Greek, estiatorio Milos is home to the most extensive collection of Greek wines in Singapore. These wines, made from indigenous grape varieties like Assyrtiko, Xinomavro, and Agiorgitiko, are sourced from regions as diverse as the volcanic terroir of Santorini and the mountainous slopes of the Peloponnese. This focus on Greek wines not only complements the cuisine, but also celebrates Greece’s rich wine-making heritage.
