At MO Bar, the latest menu, Vol. 7: Modern Localism – The City of Art, traces Singapore’s creative landscape through 15 cocktails, created in collaboration with 11 local names across design, perfumery, food, and music.
Standouts include the aromatic Sifr Fizz with essential oil hydrosol and saffron; Velour Kiss, blending gin with chamomile and bee pollen; and Kopi Pumptini, a localised espresso martini featuring kopi and roasted barley bourbon. For dessert, B.T.B (Bean-to-Bar) pairs bourbon with cacao kombucha, while Dopa? Dopa! leans indulgent with pistachio and salted caramel.
Evening highlights include the Reclaimed Sling 3.0, a modern riff on the Singapore Sling, and Jo-hwa, a fruit-forward mix with matsutake-infused gin and pear.

Bar Somma
At Bar Somma, Italian flavours take centre stage in a bold, savoury cocktail programme by Mel Chavez. The menu unfolds across three chapters: Aperitivo, Savoury, and Renewed Classics.
Expect inventive combinations like the Amalfi Gimlet with celery-infused gin, Amatriciana with tomato and guanciale vodka, and the umami-driven EVOOtini with olive oil and kombu Campari. Classics get a twist with drinks like Torino Velvet, a creamy coffee-forward blend, and Taras Fungorum, layered with bourbon and mushroom tincture.
Pair these with hearty Italian plates and house-made pastas. During Golden Hour (6pm–7:30pm), your first cocktail comes with a complimentary serving of their signature Carbonara.

The Champagnery
Located along Amoy Street, The Champagnery is Singapore’s only champagne-focused speakeasy.
The menu spotlights everything from renowned houses like Louis Roederer to rare grower labels, alongside a concise cocktail offering (including a four-for-$60 deal before 9pm). Expect a plush, moody setting that evolves into a lively, music-led space as the night progresses.
Open till 4am on weekends, it’s also one of the few late-night, non-club venues in the city. A unique touch: Freshly made sweet and savoury focaccia, served instead of typical bar bites.

Horatio
Located at Resorts World Sentosa, Horatio is a whisky-forward bar housing over 300 rare bottles, including highly collectible expressions.
The experience centres around the Trails & Tales menu, a 12-drink journey across global distilling regions. Highlights include Kueh Kueh Spirits, a Peranakan-inspired mix with gula melaka and salted egg; Highland Hermit, a Scotch-based blend with honey and thyme; and Dragon’s Breath, an intriguing mix of cognac, sherry and soy.
For a more exclusive experience, The Enclave offers access to rare, invitation-only pours. Bar bites reflect the same global narrative, from wagyu skewers to salmon tacos with caviar.

The St. Regis Bar
At The St. Regis Bar, old New York glamour meets Singapore sensibility. The Time After Time menu explores five decades of cocktail culture, interpreted through both cities.
Expect drinks like the Merlion Sling, a local take on the classic; Eternal Tropicalia, a rum-forward nod to the 1960s; and Disco-Tea-Que Spritz, a smoky, tea-infused 1970s tribute. The futuristic DOF.01 Old Fashioned rounds things off.
Don’t miss the Straits Mary, a bold reinterpretation of the Bloody Mary with bak kwa–infused bourbon and chilli heat.
