In collaboration with Orca Singapore, VUE Bar & Grill spotlights Australian Stone Axe Wagyu and Akaroa King Salmon in its new spring menu by Executive Chef Sam Chin, with a focus on ethical sourcing and quality.

The sustainably raised Akaroa Salmon, often dubbed the ‘Wagyu of the sea’, appears in dishes such as Salmon Crudo with ginger mirin dressing, as well as a main served with cauliflower, leek, and white wine sauce. Dinner options include cured salmon with ikura and smoked nori oil, or a mi-cuit version with cauliflower purée and hazelnut oil.

From Australia, Stone Axe Wagyu takes centre stage in a duo of striploin and braised beef cheek, finished with beer mustard and wild mushroom sauce, showcasing its signature marbling and richness.

Bold Middle Eastern flavours meet Mediterranean influences at Michelin-recommended Fat Prince, where mezze, kebabs and hearty mains anchor the menu. Highlights include Moroccan Chicken Tagine, Lamb Porterhouse and a customisable Build-It Kebab selection.

Cocktails lean inventive, from the za’atar-infused Sultan’s Negroni to the creamy Tahini Kiss, alongside zero-proof options. Desserts reinterpret classics, including Dubai Chocolate Knafeh with molten dark chocolate and pistachio ice cream, and Baklava ice cream with orange honey.

A four-course weekday set lunch is priced at $29++, while the weekend Bottomless Royal Brunch pairs free-flow drinks with sharing plates, such as Braised Lamb Shawarma and Steak & Eggs.

North Miznon delivers a modern Mediterranean experience with a daily changing menu shaped by seasonality and spontaneity, guided by Michelin-starred chef Eyal Shani and executed by Chef Or Hakmimi.

Expect dishes like rosemary-infused focaccia with dips, hummus topped with prawns, lamb kebab, octopus shashlik, and Jerusalem artichokes in onion cream. Vegetables are treated as centrepieces, making the menu notably vegetarian-friendly.

On Friday and Saturday nights, the energy ramps up with Sage Fire, where the space transforms into a lively, communal celebration once service ends.

Spanning 5,000 sq ft, The Peranakan Club combines dining with a ‘living museum’ concept dedicated to preserving Peranakan culture across six curated experiences.

At its core is The Little Nyonya, a casual dining space by Chef Raymond Khoo, serving family recipes passed down through generations. Highlights include Buah Keluak, Itek Tim enriched with XO brandy, and Nasi Ulam Dulu Kala, a fragrant mix of herbs, spices and salted fish.
