Created by Hilton Singapore Orchard’s Executive Sous Chef Cindy Khoo and Meilleur Ouvrier de France (MOF) Chef-confectioner Gabriel Le Quang, this fifth afternoon tea chapter shines the spotlight on sculptural French pastries. Think Matcha Swans with pistachio praline, Braised Wagyu Brûlée braised in Ginger.Lily’s house-blend Botanique en Fleurs 68% dark chocolate, finished with mustard sabayon flame-torched à la minute, Fungi Gyoza with forest mushrooms in bechamel, scones, and the Chocolate & Pomelo in a delicate filo pastry shell cradling fresh pomelo wedges with citrus gel and chocolate cream, among others.

Indulge in a Spring Elegance Afternoon Tea with acclaimed pastry chef Mandy Siu (of Finesse Patisserie in Hong Kong) at The St. Regis Singapore. In collaboration with Classic Fine Foods and Chocolat Weiss, this limited-time Afternoon Tea menu is inspired by the elegance of spring, featuring vibrant citrus flavours of yuzu, orange, lemon, and lime, capturing the season’s freshness through elegant, handcrafted sweet and savoury bites.
Look forward to an assortment of spring-inspired sweets, such as the Pink Grapefruit & Yuzu Cheesecake, Black Lemon Honey Gâteau, and the Weiss Mahoe 76% Chocolate Flan. The menu also features freshly baked scones alongside Chef Mandy’s Weiss Anéo 34% Chocolate Orange Scone, served with her special Orange Hazelnut Whipped Ganache spread, as well as a selection of jams and clotted cream. Savoury offerings include a Foie Gras Sandwich, Lobster Cannolo with wasabi mayonnaise, and Truffle Egg Mayonnaise & Asparagus Mimosa Tart.

Southern Italian restaurant and rooftop bar Sospiri launched its new Sunday Family Brunch ($68++ per guest, minimum 2 pax), offering a selection of specially curated menu that’s served as a sharing-style menu for slow dining. While you indulge, the little ones can also look forward to Balloon Sculpting and Face Painting by Magic Painters.
Menu highlights include Burrata Cheese with Avocado and Bronte Pistachios, Truffle Stracciatella and Mortadella Schiacciata, Seafood Fritto Misto, homemade Spaghetti Chitarra with Black Truffle and Cacio Pepe, Grilled Wagyu Beef Skirt Steak, as well as classic Grilled Sardinian Seabass with Amalfi Lemon Sauce.
