When it comes to entertaining, a frayed nerve is as bad as a collapsed mousse; there is simply no way around them especially when the guests are already on their way. The good news is that you don’t have to suffer either simply by calling in the experts to assist you.

Chef Eric has also created two Lunar New Year menus for 2020 - the Year of the Rat. The elaborate menus, made up of seven and eight courses, respectively, feature an array of festive dishes associated with prosperity and merry-making, including Braised Fish Maw and Crabmeat Thick Soup, Steamed Black Garoupa ‘Hong Kong Style’, as well as Traditional Steamed Soon Hock with Chinese Mushroom and Red Dates. As with any local Lunar New Year feasts, it all starts with Salmon Yu Sheng.

Chef Eric oversees the hotel’s culinary operations, the menus of its restaurants and bars, and the banqueting department. With over two decades of culinary and catering experience – he famously began his career when he was sixteen – Chef Eric can whip up Cantonese, Western, Peranakan, Pan-Asian, and Singaporean dishes.

If finding an appropriate venue is a challenge, InterContinental Singapore can offer unique entertainment spaces within the hotel premises. A top option is the Presidential Suite, which is ideal for an intimate cocktail or high tea for up to 50 persons; another is the retro-luxe cocktail bar, Idlewild, with its meticulously drawn up beverage list.
